Fresh peas can be eaten if small, however as they mature boiling, steaming or frying is beneficial as it helps bring out their sweetness. Traditionally they were dried, canned or in more recent times frozen as peas do not store well. Mangetout, also known as Snap or Sugar peas are eaten in pod form, before they mature.
