Aubergines, Solanum melongena, are commonly refered to as Egg Plants in America, related to Tomato they are usually grown under protection in greenhouses or polytunnels. Although only recently popular in the UK, it is not difficult to grow. The fruits are best cooked, which makes them more tender and allows them to develop a rich complex flavour. They are often used in stews or roasted where they absorb the fats and sauces to give rich textured dishes, such as Moussaka and a vast array of Curries.
